The 2016 vintage was a very pleasing and even season. It started off very early, with beautiful spring weather that boded well for flowering, and the ripening period proceeded warm and dry. Vintage was the earliest ever on the Mornington Peninsula. Lovely fruit ripeness and natural acidity in the wines. Hand harvested. Whole bunch pressing, 100% wild yeast fermentation in French oak barrels (no new oak), 100% natural malolactic fermentation in barrel, 8 months in wood on lees with 1 racking prior to bottling. Light fining and filtration.
Bright lemon colour with aromas of lemon pith, white peach and nectarine. On the palate the wine is fresh and bright, with citrus fruit and fruity honey nougat flavours.
