Producer note: The iconoclastic Philippe Pacalet, who was for years the régisseur (estate manager) for Henri Roch of Domaine Prieuré-Roch, started his own négociant operation in 2001. He has moved operations from Gevrey to Nuits and now to Beaune and has installed himself in the old de Montille cellars near the railroad station, which are ice cold. Pacalet also noted that because he expressly bottles with a high level of CO2 that he strongly advises decanting his wines in advance of serving them. Tasting note: Here too there is a whiff of petrol character on the hazelnut, lemon rind and floral-scented nose. Exceptionally rich, concentrated and palate coating medium-bodied flavors possess a seductive mouth feel while offering slightly better complexity if not quite the same persistence on the attractively refreshing finish.
