Producer note: François Servin, along with his export manager Mark Cameron, direct the operations of this 32 ha domaine. Cameron’s take on the 2015 vintage was that “the growing season was actually relatively calm as it was hot and dry and thus there wasn’t much disease pressure to speak of. The skins thickened considerably as a result and it was so dry that the huge storm of August 31st did a lot of good overall but obviously the hail that came with it cost us quite a bit of yield in certain of our vineyards, in particular in Les Forêts, Les Clos, Blanchot and Montée de Tonnerre. We mobilized our picking teams as fast as we could and attacked the harvest on September 4th. The fruit was perfectly clean and other than taking care in the hailed vineyards it was possible to pick quickly. Sugars were very good though acidities were on the low side. However, because most of it was in the form of tartaric acid the post-malo pHs were actually pretty good and as a result the wines don’t drink as though they’re low in acid. I think that people are going to be very pleasantly surprised by how good the 2015s are plus they should be very enjoyable young.” Note that a number of now in-bottle 2014s were revisited below. Tasting note: The refined and admirably pure if highly restrained nose is comprised by white flower, tidal pool and subtle spice aromas that are followed by citrus and mineral-infused flavors that are attractively textured, precise and explosive on the hugely long and very dry finish. This beauty is a lovely combination of power and finesse while delivering buckets of Chablis character. Lovely if not necessarily more interesting than the Vaillons.
